Diabetic Special

Stir Fried Broccoli, Spinach and Cabbage in Chilli Garlic Sauce

A creative way to have your daily quota of vegetables. Addition of vegetables like broccoli, spinach, cabbage, capsicum and zucchini tremendously increases vitamin a content of this recipe.

Makes 6 servings

Ingredients


1/2 cup cabbage cubes
1/2 cup chopped spring onions whites
1 cup spinach (palak) , torn into pieces
3/4 cup thickly sliced baby corn , parboiled
3/4 cup broccoli florets , parboiled
3/4 cup snow peas , each cut into 2 and parboiled
1/2 cup capsicum cubes
1/2 cup sliced zucchini (optional)
1 tsp chilli-garlic paste
2 tsp cornflour mixed with 1/2 cup water
1 tbsp oil
salt to taste


Method
  1. Heat the oil in a wok or a frying pan. Add the cabbage and ¼ cup water and allow to cook till the water evaporates and the cabbage is tender.
  2. Add the spring onion whites and spinach and stir-fry for another minute.
  3. Add all the other vegetables and the chilli-garlic paste and cook till the vegetables are tender but still crispy.
  4. Add the corn flour paste and salt. Mix well and allow it to come to boil.
  5. Serve immediately.


Tips
  1. The microwave has been used to hasten the process.
  2. You can also make this dish on the gas; just remember to cook on a very low flame and stir continuously till the bitter gourd slices become crispy.
