Orange Sesame Tabbouleh Video by Tarla Dalal

This is aromatic, flavourful dish that comprises of cooked dalia, tossed in with spring onions, parsley, tomato cubes, and toasted sesame seeds, olive and salt. Orange zest and orange squash adds a great citrusy flavour to this dish that is meant to be eaten chilled!

Makes 4 servings

Ingredients

1/2 cup orange segments , cut into halves
1 cup broken wheat (dalia)
1/2 cup finely chopped parsley
2 tbsp finely chopped spring onion greens
1 tbsp grated orange rind
1/4 cup orange squash
salt and freshly black ground pepper powder to taste
2 tbsp lemon juice
2 tbsp olive oil
1/4 cup tomato cubes

For The Garnish

1 tbsp roasted sesame seeds (til)


Method
  1. Combine the broken wheat with 2 cups of water in a sauce pan and cook on a medium lame for 8 to 10 minutes or till it is soft.
  2. Drain and refresh it with cold water and again drain well.
  3. Transfer the broken wheat to a bowl, add the parsley, spring onion greens, orange zest, orange squash, salt, black pepper powder, lemon juice and olive oil and toss well.
  4. Refrigerate for atleast 2 hours.
  5. Just before serving, add the orange segments and tomatoes and toss well.
  6. Serve immediately garnished with sesame seeds.

Tips
  1. If cous-cous is available, use that instead of broken wheat (dalia).
