Organize an outdoor lunch-dish up hot bajra rotis and serve with khandeshi dal-they make an amazing pair. Moong, masoor, toovar and urad dals are cooked with a spicy paste made of onions, dry coconut, chillies, pepper and more. A fiery tadka adds deeper flavor to the dish and brings out beautiful colors of the dal. Have fun!

Ingredients


For The Dal

1 tbsp finely chopped coriander (dhania)


Method 
For the dal

  1. Clean, wash and soak the dals in water for 2 hours. Drain.
  2. Combine the dals, 2 cups of water, salt and turmeric powder in a pressure cooker, mix well and pressure cook for 2 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Transfer the dals to a deep bowl. Keep aside.

For the masala

  1. Heat the oil in a non-stick pan, add the coconut and onions and sauté on a medium flame for 2 to 3 minutes.
  2. Add the red chillies, coriander powder, cloves, cardamom, cinnamon and peppercorns and sauté on a medium flame for another 1 to 2 minutes.
  3. Add the garlic and sauté on a medium flame for a few more seconds.
  4. Remove from the flame and allow it to cool completely.
  5. Once cooled, blend in a mixer to a smooth powder and keep aside.

How to proceed

  1. Add 1/2 of the prepared masala to the dal, mix well and keep aside.

For the tempering

  1. Heat the oil in a small kadhai and add the mustard seeds.
  2. When the seeds crackle, add the red chilli and bayleaf and sauté on a medium flame for 30 seconds.
  3. Add the prepared dal mixture, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  4. Add the lemon juice and coriander and mix well and cook on a medium flame for another 2 minutes.
  5. Serve immediately garnished with coriander.

Ingredients

2 cups grated paneer (cottage cheese)
1/2 cup cooked rice (chawal)
salt to taste
1 1/2 tsp chopped green chillies
1/4 cup plain flour (maida)
1/4 cup finely chopped coriander (dhania)
1/2 cup finely chopped coloured
capsicum (red , yellow and green)
bread crumbs for rolling
oil for greasing and cooking

For Serving

tomato ketchup


Method
  1. Combine the paneer, rice, salt, green chillies and plain flour in a bowl and mix well.
  2. Add the coriander and capsicum and mix well.
  3. Divide the mixture into 8 equal portions and roll each portion between the palms of your hands to make a flat round cutlet.
  4. Roll the cutlets in bread crumbs till they are evenly coated from both the sides.
  5. Heat a non-stick tava (griddle) and lightly grease it using oil. Cook the cutlets on it using a little oil till brown spots appear on both the sides.
  6. Serve immediately with tomato ketchup.

An easy version of the traditional meetha chawal. It is a good version than the regular sweet. . . It will surely be loved by all adults.

Makes 4 servings

Ingredients

3 1/2 cups cooked rice (chawal)
3/4 cup sugar
2 tbsp ghee
2 sticks cinnamon (dalchini)
2 cloves (laung / lavang)
2 bayleaves (tejpatta)
2 pinches of saffron (kesar) strands dissolved in 2 tbsp warm
a few drops of saffron colour

For The Garnish


Method
  1. Combine the rice and sugar in a bowl, mix well and keep aside.
  2. Heat the ghee in a broad non-stick pan, add the cinnamon, cloves and bayleaves and sauté on a medium flame for 30 seconds.
  3. Add the rice-sugar mixture and mix well.
  4. Combine the saffron-milk mixture and saffron colour in a small bowl and mix well.
  5. Add this saffron mixture to the rice, mix well and cook on a slow flame for 4 to 5 minutes or till the sugar melts completely, while stirring occasionally.
  6. Serve hot garnished with almond and pistachio slivers.

Spinach Cheesy Cigars

Recipe source: Snacks under 10 minutes

Crunchy samosa patti rolls, filled with a spicy cheese and spinach mixture. Serve these hot to enjoy the taste of the melted mozzarella cheese. Ready-made samosa pattis are available at most provision stores.

Preparation Time: 5 minutes.     Cooking Time: 8 minutes.     Makes 18 cigars.

To be mixed into a filling
½ cup finely chopped and blanched spinach (palak)
¼ cup grated mozzarella cheese
1 tbsp finely chopped green chillies
Salt to taste

Other ingredients
samosa patti, readily available in the market
1 tbsp plain flour (maida) mixed with 1 tbsp water
Oil for deep-frying

For serving
Hot garlic sauce 

  1. Cut each samosa patti into 3 to get 75 mm. x 62 mm. (3" x 2½") rectangular pieces. You will get 18 pieces in all.
  2. Place a samosa patti on a clean dry surface.
  3. Place a portion of the filling at one corner of the samosa patti and roll it up tightly to make a cigar.
  4. Seal the edge of the samosa patti using a little of the flour paste.
  5. Repeat with the remaining pattis and filling to make 17 more cigars.
  6. Heat the oil in a kadhai and deep-fry the cigars a few at a time, till they are golden brown from all the sides. Drain on absorbent paper.
Serve hot with hot garlic sauce.

Handy Tips
  1. 2½ cups chopped spinach when blanched gives ½ cup blanched spinach.
  2. Squeeze out all the water from the blanched and chopped spinach to prevent the cigars from becoming soggy.

Oats can be called a doctor in a bowl, since it fights against conditions ranging from high blood pressure and cholesterol to diabetes and even cancer! carrots and paneer add more good health and taste to this wonder ingredient, while the green chutney peps up the mood.

Makes 6 tikkis

Ingredients


For The Healthy Green Chutney (makes 1/4 Cup)
1/2 cup chopped mint leaves (phudina)
1/4 cup chopped coriander (dhania)
2 tbsp roughly chopped onions
1/2 tbsp lemon juice
a pinch of sugar
2 green chillies , roughly chopped
salt to taste

For The Tikkis

1 cup quick cooking rolled oats
1/4 cup grated low-fat paneer (cottage cheese)
1/4 cup grated carrot
1/2 cup boiled , peeled and mashed potatoes
2 tbsp finely chopped coriander (dhania)
1 tsp lemon juice
1 1/2 tsp ginger-green chilli paste
1 tsp chilli powder
1/2 tsp garam masala
1 tsp dried mango powder (amchur) (amchur)
salt to taste

Other Ingredients

1/4 cup low-fat milk (99.7% fat-free) for coating

1/2 cup quick cooking rolled oats for coating
1 1/2 tsp oil for greasing and cooking


Method 
For the healthy green chutney

  1. Combine all the ingredients and blend in a mixer to a smooth paste using very little water.
  2. Keep refrigerated till use.

For the tikkis

  1. Combine all the ingredients in a bowl and mix well.
  2. Divide the mixture into 6 equal portions and roll out each portion into a 50 mm. (2”) flat round tikki.

How to proceed

  1. Dip each tikki in the milk and then roll them in oats till they are evenly coated from both the sides.
  2. Heat a non-stick tava (griddle) and grease it using 1/4 tsp of oil.
  3. Cook each tikki, using 1/8 tsp of oil, till they turn golden brown in colour from both the sides.
  4. Serve hot with healthy green chutney.

A thick creamy soup made using not-so-common vegetable pumpkin and dill seeds and mildly flavoured with onions and black pepper powder.

Ingredients

3 cups red pumpkin (bhopla / kaddu) cubes
1/2 tsp dill seeds (suva dana)
2 tbsp butter
2 tbsp finely chopped onions
salt to taste
1/4 cup milk
freshly ground black pepper powder to taste

For The Garnish

2 tbsp fresh cream
2 tbsp chopped spring onion greens


Method
  1. Heat the butter in a non-stick deep pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the dill seeds and sauté for 1 more minute.
  3. Add the pumpkin pieces, salt and 3 cups of water and cook on a medium flame for 10 minutes. Allow it to cool completely.
  4. Once cooled, blend using a hand blender to a smooth mixture.
  5. Add the milk, mix well and cook on a medium flame for 2 more minutes.
  6. Serve hot garnished with fresh cream and spring onion greens.

Ingredients

2 1/2 cups cooked rice (chawal)
2 tbsp oil
1/2 cup finely chopped onions
1 tsp garlic (lehsun) paste
1 1/2 tsp chilli flakes
1/4 cup boiled rajma (kidney beans)
1/2 cup chopped and boiled mixed
vegetables (french beans and carrots)
salt to taste
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)

Method
  1. Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 2 to 3 minutes or till they turn translucent.
  2. Add the garlic paste and chilli flakes and sauté on a medium flame for another 1 minute.
  3. Add the rajma and mixed vegetables and sauté on a medium flame for 1 more minute.
  4. Add the rice and salt, toss well and cook on a medium flame for 2 minutes.
  5. Add the chilli powder and turmeric powder, toss again and cook on a medium flame for another 1 to 2 minutes.
  6. Serve immediately.

Ingredients

3 whole dry kashmiri red chillies
3 garlic (lehsun) cloves (lehsun)
3 tbsp oil
1/2 cup thinly sliced onions
1/2 cup thinly sliced capsicum
1/2 cup chopped tomatoes
1/4 tsp turmeric powder (haldi)
2 tbsp fresh curds (dahi)
2 cups cooked rice (chawal)
salt to taste


For The Garnish


Method
  1. Combine the red chillies and garlic along with 1 tsp of water and grind in a mortar-pestle (khalbhatta) to a smooth paste. Keep aside.
  2. Heat the oil on a non-stick tava (griddle), add the onions and sauté on a medium flame for 1 minute.
  3. Add the chilli-garlic paste and sauté on a medium flame for another 30 seconds.
  4. Add the capsicum, tomatoes, turmeric powder and curds and sauté on a medium flame for 1 more minute.
  5. Add the cooked rice and salt and toss well. Cook on a medium flame for 2 minutes,while tossing once in between.
  6. Serve immediately garnished with cheese.

3/4 cup chilled mango pulp
1/2 cup readymade chilled orange juice
4 tbsp chilled fresh curds (dahi)
1/2 cup vanilla ice-cream
1 3/4 tbsp sugar

For Serving
4 tbsp crushed ice


Method
  1. Combine the mango pulp, orange juice, sugar,curds and vanilla ice-cream and blend in a juicer till the mixture is smooth and frothy.
  2. Place 2 tbsp of crushed ice into 2 individual glasses and pour equal quantities of the smoothie into each glass.
  3. Serve immediately.

Whether kids, teens or adults, almost everybody loves chocolate, and hence this mousse too! the luscious dark chocolate and the contrasting whipped cream together make it a temptation hard to resist. What is more, this mousse is also one of the easiest to prepare. Just make sure that you use the right dark chocolate to ensure the best taste and colour. As far as possible, try not to store the chocolate in the fridge; else, bring it to room temperature before using in this recipe. Serve chilled with an elegant garnish of whipped cream.

Ingredients

1 cup roughly chopped dark chocolate
1/4 cup milk
1 tbsp powdered sugar
1 3/4 cups whipped cream
1/4 tsp vanilla essence
2 tsp honey

For The Garnish
grated chocolate

Method
  1. Combine the chocolate and milk in a microwave safe bowl and microwave on high for 30 seconds. Remove and mix well until no lumps remain.
  2. Strain the mixture using a sieve and keep aside.
  3. Combine the sugar and ¾ cup whipped cream in a deep bowl and fold gently.
  4. Add the chocolate–milk mixture and fold gently.
  5. Add the vanilla essence and honey and fold gently.
  6. Pour equal quantities of the mixture into 4 individual bowls/glasses and refrigerate for atleast 1 to 2 hours or till the mousse sets.
  7. Top each bowl/glass with ¼ cup of whipped cream and garnish with chocolate and serve chilled.

Handy tip :

  1. You can also melt the chocolate-milk mixture on a double boiler.

Variation:

  1. Rich mint chocolate mousse
  2. At step 5, instead of vanilla essence, add 2 tsp of peppermint essence, mix well and proceed as per the recipe.

Pav bhaji is more than a mere snack! it’s a quick meal that can be grabbed on the go – since large potions of the bhaji are made in advance and simply reheated with a few spices before serving. You just need to wait till the pav is toasted to perfection with oodles of butter! hmm, top with the raw onions and tomatoes, squeeze a tad of lemon atop the bhaji, and forget yourself!

Makes 4 plates



Ingredients



For The Chilli-garlic Paste
(makes approx. 1/2 cup)
5 to 6 whole dry kashmiri red chillies , deseeded
8 to 10 clove (lehsun) , roughly chopped

For The Bhaji
2 tbsp butter
1 tbsp oil
1 tbsp cumin seeds (jeera)
3/4 cup finely chopped onions
1/2 cup chopped capsicum
1 1/2 cups finely chopped tomatoes
1 1/2 tbsp pav bhaji masala
2 tsp chilli powder
salt to taste
1/2 cup boiled and lightly mashed green peas
1 1/2 cups boiled , peeled and mashed potatoes
2 tbsp finely chopped coriander (dhania)

For The Pav
8 laddi ladi pav
8 tsp butter for cooking
1 tsp pav bhaji masala

For Serving
1 cup finely chopped onions
4 lemon wedges
4 roasted papad
4 tsp butter

For The Garnish
4 tbsp chopped coriander (dhania)

Method
For the chilli-garlic paste

  1. Soak the red chillies in enough warm water for atleast an hour.
  2. Drain the chillies, add the garlic and blend in a mixer till smooth, adding little water. Keep aside.

For the bhaji

  1. Heat the butter and oil in a kadhai and add the cumin seeds.
  2. When the seeds crackle, add the chilli-garlic paste and sauté on a medium flame for 1 to 2 minutes.
  3. Add the onions and sauté for 3 to 4 minutes, while stirring occasionally.
  4. Add the capsicum and sauté for 1 more minute.
  5. Add the tomatoes and cook for 3 to 4 minutes, mash well using a potato masher.
  6. Add the salt, pav bhaji masala, chilli powder and cook for another 2 minutes.
  7. Add the green peas, potatoes, mix well and cook along with 1/3 cup of water for 1 to 2 minutes, while mashing it with the help of a masher.
  8. Add the coriander, mix well and cook for 1 minute.

For the pav

  1. Slit 2 pavs vertically and keep aside.
  2. Heat a large tava, add 2 tsp of butter and slit open the pavs and place on it.
  3. Cook on a medium flame till they turn light brown and crisp on both the sides. (add more butter if required).

How to serve

  1. Place ¼th of hot bhaji, 2 pavs, ¼ cup of onions, a lemon wedge and a papad on a plate.
  2. Top the bhaji with 1 tsp of butter and serve immediately garnished with 1 tsp of coriander.
  3. Repeat with the remaining ingredients to make 3 more plates.

Handy tip:

  1. Pav bhaji masala is a spice blend, which is readily available under different brand names at most grocery stores.
